Substitutions

Found these in the back of an old cooking class binder! Some of them are quite surprising, but come in handy if you don’t have the exact ingredients called for, or if you just want to change up a recipe

If a recipe calls for ..you can try using …
Baking Powder (1 tsp)1/2 tsp cream of tartar + 1/4 tsp baking soda
Buttermilk1 TBSP lemon juice or vinegar, plus milk to make 1 cup (let stand 5 minutes before using)
Baking Chocolate – Sweet (4 oz)1/4 cup unsweetened baking cocoa powder,
+ 1/3 cup granulated sugar
+ 3 TBSP shortening
Baking Chocolate – Unsweet (1 oz)3 TBSP unsweetened baking cocoa powder
+ 1 TBSP cookie oil or shortening, melted
Baking Chocolate – Semisweet (1 oz)3 TBSP semisweet chocolate pieces (chocolate chips)
Cornstarch (1 TBSP)2 TBSP Flour
Corn Syrup (1 cup)1 cup granulated sugar
+ 1/4 cup water
Egg (1 whole)2 egg whites or
2 egg yolks or
Egg substitute
Garlic ~ 1 clove1/2 tsp bottled/jarred minced garlic or 1/8 tsp garlic powder
Herbs, fresh (1 TBSP)1/2 to 1 tsp dried herb, crushed
Honey (1 cup)1 1/4 cups granulated sugar
+ 1/4 cup water
Lemon Juice (1 tsp)1/2 tsp vinegar
